Veggie Fritters are a great option for breakfast, lunch or dinner. They are perfect for using up leftover veggies and can be served alongside bacon or egg if you’re looking for an extra treat. I recommend serving (once cooled) alongside hummus, which is loaded with protein, essential vitamins and minerals.

Ingredients

  • 1/2 cup white self-raising flour
  • 1/4 cup wholemeal self-raising flour
  • 1 medium zucchini, grated
  • 1/2 cup spinach, chopped finely
  • 1/2 cup reduced fat cheese, grated
  • 2 eggs, lightly beaten
  • 3/4 cup milk
  • 1 tbsp. olive oil
  • 1 tbsp. hummus

Method

  1. Sift flours and salt into a large bowl – then add vegetables and cheese
  2. Combine eggs and milk, stirring liquid ingredients into dry ingredients
  3. Heat oil in a large non-stick frying pan
  4. Add 1/4 cup mixture to the pan and cook until golden brown on both sides and cooked through
  5. Serve with a hummus dipping sauce
