Sweet Potato & Salmon Quiche
My quiche recipe with sweet potato and salmon is a meal the whole family will love. An
easy lunch option, quiches are healthy, filling and
rich in Omega-3, which is essential for growing babies and children.
Ingredients
- 1 cup roasted sweet potato, cut into bite-sized pieces
- 1 cup salmon, mashed
- 4 eggs
- 1 ½ cups milk
- ½ cup self-rising flour
- 1 ½ cups milk
- ½ cup self-rising flour
- ½ cup cheese, grated
- 1 tbsp. butter, melted
Method
- Preheat oven to 180°C.
- Whisk together eggs, milk, flour and melted butter in a medium bowl.
- Fold in roasted sweet potato and mashed salmon into the egg mixture.
- Pour mixture into an ovenproof dish or casserole tin and sprinkle top with grated cheese.
- Bake for 45-50 minutes until golden brown in colour.
