Mini Ham and Cheese Savoury Muffins
While sweet muffins are good, savoury muffins are even better! These Mini Ham and Cheese Muffins are a great addition to any lunch box, or a healthy option for an afternoon snack. With ham providing protein and cheese for calcium, these are sure to become a favourite for your little one.
Ingredients
- Cooking spray for muffin tin
- 1 cup self-raising flour
- 1 tbsp. unprocessed wheat bran
- 1/2 cup cheddar cheese, grated
- 100g 97% fat free ham, chopped
- 50g butter, melted
- 1/2 cup milk
- 1 egg, lightly beaten (or egg replacer)
Method
- Preheat oven to 200°C (400°F/Gas 6) and lightly spray 12 mini muffin holes with oil spray
- Sift the flour and bran into a bowl and stir in the cheese and ham. Make a well in the centre
- Whisk together the milk, butter and egg, and pour into the well mixing until just combined (note: the mixture should still be lumpy)
- Divide the mixture among the muffin holes and bake for 10 to 15 minutes, or until the muffins have risen
