Healthy Sausage Bites
Healthy Sausage Bites are a delicious lunchtime meal or afternoon snack for your little one. These bites are an easy way to up your toddler’s vegetable intake – with many unaware that they are packed with nutritious ingredients like carrot and zucchini. And, for an added dose of dairy you can add cottage cheese!
Ingredients
- 2 eggs
- 1/2 brown onion, finely diced
- 2 tablespoons light soy sauce
- 1 cup cottage cheese (optional)
- 1/2 cup carrot, grated
- 1/2 cup zucchini, grated
- 1/2 cup multigrain breadcrumbs
- 1 cup oats
- 1 sheet reduced fat puff pastry
Method
- Preheat oven to 200°C
- Mix eggs, onion, soy sauce and cottage cheese in a food processor
- Combine carrot, zucchini, breadcrumbs and oats into a separate bowl
- Add eggs, onion, soy sauce, cottage cheese and mix through the carrot, breadcrumbs and oats
- Cut pastry in half and place the filling in the middle and roll into a log
- Bake for 20 minutes at 200°C
- Allow to cool and serve with a side salad
