My Chicken Meatballs with Tomato Sauce is another easy and simple meal option. The recipe can be prepared quickly, and it’s one that young children will love. You could also add some grated vegetables to the mix if your goal is to get your little ones eating more vegetables. And, this recipe also works well with turkey mince, as an additional option.
Ingredients
- 500g minced chicken
- 1 egg
- 1 small onion, finely diced
- 1/2 cup Panko breadcrumbs
- 1/2 cup cheese, grated
- 1 tbsp. olive oil
- 1 tsp. fresh herbs (rosemary, thyme, oregano, marjoram)
- 1 can salt-reduced tomatoes
- 1 clove garlic, chopped
Method
- To make the chicken meatballs, mix all ingredients together in a medium-sized mixing bowl. Then, roll into small balls and fry over a medium heat using a little olive oil until cooked through
- As an alternative, you can also bake the chicken meatballs (following the same step above to create small balls) in the oven at 200°C for 20-30 minutes, or until cooked through
- To make the tomato sauce, simmer the salt-reduced tomatoes in a small amount of olive oil and chopped garlic for amount 15 minutes, or until thickened
- Once tomatoes are reduced, serve alongside chicken meatballs
