Cheesy Vegetable Pikelets
Ingredients
- 1 cup flour
- ½ zucchini, grated
- ½ carrot, grated
- ½ cup cheese, grated
- 2 tbsp. olive oil
- 1 tsp. baking powder
- Pinch of salt
- ½ cup milk
- 1 egg
Method
- Mix the flour, baking powder, vegetables, cheese and salt into a batter.
- Heat the olive oil in a pan over a low heat.
- Place a tablespoon-size of batter into the pan and cook for 3-5 minutes until firm, then flip and cook the other side.
- Repeat with the remainder of the batter and serve.
