Burger and Vegetable Mash
Little kids love mince, and the good news is that you can find extremely lean mince, or even pre-made burger patties in supermarkets, which contain less than 10g of fat per 100g. As beef is one of the richest sources of iron, a plain burger or just mince itself served in a child friendly way ensures an iron-rich meal.
Ingredients
- 1 cup fruit-free muesli (or wholegrain cereal)
- 1 zucchini, grated
- 1 carrot, grated
- 1 small butternut pumpkin, pre-cooked and diced
- 1 small butternut pumpkin, pre-cooked and diced
- 1 tsp. butter
Method
- Preheat grill to hot
- Grill extra lean beef burgers for 20-25 minutes until cooked through. Once cooked, break up into small pieces (or blend) to suit your texture preference
- To make the vegetable mash, add olive oil to a saucepan over a medium heat
- Add the grated zucchini and carrot to the saucepan, cooking through until soft
- Remove the grated zucchini and carrot from the saucepan and place into a medium-sized mixing bowl. Add the the pre-cooked butternut pumpkin to the zucchini and carrot mix, mashing all vegetables together. Note: you can add a little butter to help mash, if desired
- Mix the burger mince through the mashed vegetables and serve!
