Healthy Oat Cookies
Full of long-lasting energy, my Healthy Oat Cookies are a simple snack kids will love. Oat Cookies are
a great lunchbox snack or after dinner treat — and are great for toddlers who are fussy eaters. Overall, they are incredibly moreish and deliciously satisfying.
Ingredients
- 2 eggs, whites only
- 1 cup Bellamy’s Organic Baby Porridge
- ¾ cup plain flour
- ¾ tsp. cinnamon
- ¾ cup brown sugar
- ½ tsp. baking soda
- 4 tbsp. unsalted butter, softened
- 1 tsp. vanilla extract
Method
- To prepare, preheat oven to 180°C and line a large baking sheet with baking paper and set aside
- Combine the sugar and butter in a bowl, beating with an electric beater for 3 minutes until light and fluffy
- Add the egg whites and vanilla
- In a separate bowl, combine the flour, oats, cinnamon and baking powder
- Fold the above dry mix through the wet mix (egg whites and vanilla)
- Form the dough into small balls on the baking sheet and bake in the oven for 10 minutes until hard
- Let cool and serve
