These soft and naturally sweet Banana, Apple & Apricot Muffins are perfect for babies discovering new textures. Packed with wholesome ingredients like fresh fruit, wholemeal spelt flour, and yoghurt, these muffins offer a delicious yet nutritious snack. The apricots provide a gentle burst of natural sweetness, while the banana and grated apple keep the muffins moist. Ideal for lunchboxes, playdates, or as an easy breakfast on the go.
INGREDIENTS
• 1 pouch (120g) Bellamy’s Organic Banana & Apple Porridge
• 1 ripe banana, mashed
• ¼ cup (40g) soft dried apricots, finely chopped (or swap for goji berries, dates or sultanas)
• 1 egg, lightly beaten
• 2 tbsp (30ml) coconut oil or unsalted butter, melted
• ¼ cup (60g) plain yoghurt
• 1 cup (120g) wholemeal spelt flour (or buckwheat flour for a gluten-free option)
• 1 tsp (4g) baking powder
• ½ tsp (1g) cinnamon (optional)
• ¼ cup (30g) grated apple (about ½ small apple)
METHOD
1. Preheat the oven to 180°C (350°F) and line a mini muffin tin with paper liners or lightly grease.
2. If the apricots are firm, soak them in warm water for 5-10 minutes to soften, then drain well and chop finely.
3. In a bowl, mix mashed banana, Bellamy’s Organic Banana & Apple Porridge pouch, chopped apricots, egg, melted butter (or coconut oil), and yoghurt until well combined.
4. In a separate bowl, whisk together the flour, baking powder, and cinnamon (if using).
5. Gently fold the dry ingredients into the wet mixture until just combined — avoid overmixing.
6. Stir in the grated apple.
7. Spoon the batter into the prepared muffin cups, filling each about full.
8. Bake for 12-15 minutes for mini muffins or 18-20 minutes for regular muffins, until a toothpick inserted into the centre comes out clean.
9. Allow to cool completely before serving.
10. Serve mashed, or cut into small pieces or whole depending on your baby’s feeding skills.
STORING LEFTOVERS: Store in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
Simply defrost at room temperature or warm in the oven before serving.
TIPS
Prep Tips:
• If your apricots are particularly firm, soaking them in warm water will soften them and make them easier to chop.
Easy Ingredient Swaps:
• Swap apricots for soft sultanas, chopped dates or finely chopped dried figs.
Allergies:
• For a gluten-free version, use buckwheat flour instead of spelt flour.
• For a dairy-free version, replace yoghurt with coconut yoghurt and use coconut oil instead of butter.
