Apple Porridge Christmas Cookies


  • 1/2 cup coconut oil
  • 1/2 cup brown sugar
  • 2 cups gluten-free flour
  • 1 tsp baking powder
  • Bellamy's Organic Fruit Pouch
  • 1.5 cups Bellamy's Organic Porridge, cooked
  • 1 tsp cinnamon
  • 3tbsp rolled oats
  • 2/3 cup raisins


  1. Preheat the oven to 180 degrees Celsius (160 degrees fan forced).
  2. Combine coconut oil and brown sugar together until well mixed.
  3. Sift flour and add to bowl. Mix flour and baking powder and with wet mixture until well combined.
  4. Add Bellamy’s Organic Fruit Pouch and cooked Apple & Cinnamon Porridge (follow packed directions) to the bowl. Fold with the mixture until combined. Add cinnamon, rolled oats and raisins to the mixture, stir until combined.
  5. Scoop small balls of mixture and roll in washed hands. Flatten balls on a baking tray with your hands, and using cookie cutters cut out cookies from the mixture. Remove excess dough from the cutter and add to the remaining cookie balls.
  6. Place cookies in the oven and cook for 18 minutes. Once golden, remove from the oven and let cool before enjoying!
