Apple Porridge Christmas Cookies
Ingredients
- 1/2 cup coconut oil
- 1/2 cup brown sugar
- 2 cups gluten-free flour
- 1 tsp baking powder
- Bellamy's Organic Fruit Pouch
- 1.5 cups Bellamy's Organic Porridge, cooked
- 1 tsp cinnamon
- 3tbsp rolled oats
- 2/3 cup raisins
Method
- Preheat the oven to 180 degrees Celsius (160 degrees fan forced).
- Combine coconut oil and brown sugar together until well mixed.
- Sift flour and add to bowl. Mix flour and baking powder and with wet mixture until well combined.
- Add Bellamy’s Organic Fruit Pouch and cooked Apple & Cinnamon Porridge (follow packed directions) to the bowl. Fold with the mixture until combined. Add cinnamon, rolled oats and raisins to the mixture, stir until combined.
- Scoop small balls of mixture and roll in washed hands. Flatten balls on a baking tray with your hands, and using cookie cutters cut out cookies from the mixture. Remove excess dough from the cutter and add to the remaining cookie balls.
- Place cookies in the oven and cook for 18 minutes. Once golden, remove from the oven and let cool before enjoying!
