Veggie Fritters
Veggie Fritters are a great option for breakfast, lunch or dinner. They are perfect for using up leftover veggies and can be served alongside bacon or egg if you’re looking for an extra treat. I recommend serving (once cooled) alongside hummus, which is loaded with protein, essential vitamins and minerals.
Ingredients
- 1/2 cup white self-raising flour
- 1/4 cup wholemeal self-raising flour
- 1 medium zucchini, grated
- 1/2 cup spinach, chopped finely
- 1/2 cup reduced fat cheese, grated
- 2 eggs, lightly beaten
- 3/4 cup milk
- 1 tbsp. olive oil
- 1 tbsp. hummus
Method
- Sift flours and salt into a large bowl – then add vegetables and cheese
- Combine eggs and milk, stirring liquid ingredients into dry ingredients
- Heat oil in a large non-stick frying pan
- Add 1/4 cup mixture to the pan and cook until golden brown on both sides and cooked through
- Serve with a hummus dipping sauce
