Kid’s Bolognese
Kid’s Bolognese is a popular lunch or dinner time meal – and this recipe adds a healthy twist with the addition of carrot, celery and zucchini. And, with Bellamy’s Organic Spelt Macaroni, you have an easy way to introduce high-energy food to your baby’s diet.
Ingredients
- 200g lean beef mince
- 1 small carrot, grated
- 1/3 brown onion, diced
- 1 celery stalk, diced
- 1 x 400g can of diced tomatoes
- 1/4 cup salt reduced tomato paste
- 1 tbsp. olive oil
- 1 small zucchini, grated
- 1 cup Bellamy’s Organic Spelt Baby Macaroni
- 1 small carrot, grated
- 1/2 clove of garlic, crushed
Method
- Heat half the oil in a large frying pan, over a medium heat
- Add the mince and brown, stirring frequently to break up any lumps, before removing from pan and setting aside
- Heat the remaining oil and add the onion, garlic, celery, zucchini and carrot – sweat these ingredients down until they are soft and fragrant
- Return the mince to the pan along with the tomatoes and tomato paste giving the mixture a good stir
- Cover and simmer for up to an hour, but in the last 10 minutes of cooking remove the lid and let the sauce reduce and thicken
- In the last 10 minutes of cooking, heat a smaller pan over a low-medium heat with a spray of oil oil and cook the Bellamy’s Organic Spelt Baby Macaroni
- Serve the Bolognese over one or two tbsp. of macaroni
