Beef Stew
Beef Stew is a healthy twist on a traditional meal! My recipe includes a mix of protein and iron and offers good texture when introducing babies to solid foods. Beef Stew is also one of the best ways to introduce red meat to toddlers and when cooked with root vegetables, provides a meal option that is tender and full of flavour.
Ingredients
- 500g beef strips
- 1 small sweet potato, cut into small pieces
- 1 tomato, finely chopped
- 1 cup salt reduced beef stock
- 1/2 small onion, finely chopped
- 1 tbsp. olive oil
- 1 zucchini, finely sliced
Method
- Heat olive oil in a medium pan over a medium heat
- Add beef strips and cook for 7-10 minutes until browned, remove from pan
- Add the onion, sweet potato and beef stock to the pan and cook for a further 7-10 minutes until sweet potato is soft
- Return meat to pan and simmer over a medium heat for 20-30 minutes
- Add tomato and zucchini
- Blend if desired, and serve
