Pumpkin, Spinach and Feta Party Pies

My Pumpkin, Spinach and Feta Party Pies are a health take on a traditional classic! A favourite of both adults and kids alike, these pies contain a good dose of calcium and a variety of vegetables making them a delicious and easy dinner or lunch time snack for growing bodies.

Ingredients

  • 400g pumpkin, roasted
  • 3 eggs
  • 2 cups spinach
  • 1 cup multigrain breadcrumbs
  • 1 small onion, finely chopped
  • 4 tbsp. feta cheese
  • 2 tbsp. olive oil

Method

  1. Preheat oven to 180°C
  2. Slice the roasted pumpkin and line the bottom of each muffin cup or ramekin with pumpkin slices
  3. Heat the olive oil in a pan and brown the onion, once browned removed from pan
  4. In a mixing bowl combine spinach, feta, egg and cooked onion
  5. Once combined, spoon the mixture into each muffin cup or ramekin and sprinkle with breadcrumbs
  6. Bake for 15 minutes, or until golden brown
