Pumpkin, Spinach and Feta Party Pies
My Pumpkin, Spinach and Feta Party Pies are a health take on a traditional classic! A favourite of both adults and kids alike, these pies contain a good dose of calcium and a variety of vegetables making them a delicious and easy dinner or lunch time snack for growing bodies.
Ingredients
- 400g pumpkin, roasted
- 3 eggs
- 2 cups spinach
- 1 cup multigrain breadcrumbs
- 1 small onion, finely chopped
- 4 tbsp. feta cheese
- 2 tbsp. olive oil
Method
- Preheat oven to 180°C
- Slice the roasted pumpkin and line the bottom of each muffin cup or ramekin with pumpkin slices
- Heat the olive oil in a pan and brown the onion, once browned removed from pan
- In a mixing bowl combine spinach, feta, egg and cooked onion
- Once combined, spoon the mixture into each muffin cup or ramekin and sprinkle with breadcrumbs
- Bake for 15 minutes, or until golden brown
