Cheesy Vegetable Pikelets are perfect for an after-school snack or for the lunchbox. They are easy to make and full of hidden veggies that the kids won’t notice, making them a nutritious snack option. And depending on what you have in the pantry at home, remember you can also switch up the veggie options below.

Ingredients

  • 1 cup flour
  • ½ zucchini, grated
  • ½ carrot, grated
  • ½ cup cheese, grated
  • 2 tbsp. olive oil
  • 1 tsp. baking powder
  • Pinch of salt
  • ½ cup milk
  • 1 egg

Method

  1. Mix the flour, baking powder, vegetables, cheese and salt into a batter.
  2. Heat the olive oil in a pan over a low heat.
  3. Place a tablespoon-size of batter into the pan and cook for 3-5 minutes until firm, then flip and cook the other side.
  4. Repeat with the remainder of the batter and serve.
